Will allowing my tortilla soup to simmer for 4+ hours affect the recipe? *Easy 10 pts*?
The recipe states to simmer on medium for 10 minutes to gain full flavor but I began early and want to keep the meal fresh for company to arrive here 4+ hours later. Would it affect the flavoring or quality of ingredients if I allowed it to simmer on low for 4+ hrs. and I stir it occasionally? *There is chicken, corn, onion, and jalapeno pepper as the main ingredients... Thank you in advance.

The recipe also states to let the stock simmer down to 1/3 of the original amount..which bothers me because then that should warrant at least an hour on low simmering to do that...also, it says to puree the soup and heat it again etc..advice?
your making tortilla soup NOT a stock. if yous simmer it for that long ,the chicken and veggies will disintegrate into the broth and form a cloudy soup. also the flavor would suck cuz if you simmer the veggies too long they start to break apart and taste like rubber or get bitter. the texture of the soup will degrade. I recommend just letting it sit until before the guests come. This way the flavors concentrate and all you have to do is reheat it and serve. tortilla soup doesnt have to be pureed. never in my culinary career have i pureed tortilla soup. I like the texture of the veggies in my broth. you don't really have to reduce it. Reducing is just a form of concentrating the flavors. if you let it sit, it will concentrate the flavors as well. Seasoning is the key to a great meal!! you can have the best sirloin steak but if its not seasoned properly, you got nothing. hope this helps!! good luck sweetie!!!
