Beets - Problems, Varieties and Harvesting
If you sow your beets too early they may "bolt", that is they will run to seed rather than form edible roots, only if the temperature remains below 40 degrees F. for a number of weeks. If this should happen, pick the leaves and use them for salad greens and re-sow the row. If you have already limed the soil, and the leaves become stunted or yellowish, you may have phosphorus deficiency. If this is the case, add fertilizer, superphosphate or a covering of bone meal.
The beets are prey to few pests, particularly where the winter freeze kills bugs and larvae in the soil. In warmer areas beets may be attacked by tiny yellow leaf miners, which can be controlled with an organic pesticide.
Leaf spots may develop if you grow the beets in the exact same spot you planted them the year before. This fungus can be destroyed by spraying with a fungicide.
If the roots develop black areas, which is an indication the soil may be deficient in boron. This can be added to the soil by mixing 1/4 teaspoon of household borax with 12 gallons of water. This mixture can be sprinkled where you are going to plant your future beet crop.
Varieties of Beets
Beet roots may be round or tapering and their colors may be red, yellow, or white. A recommended red beet, know as 'Early Wonder,' matures in about 55 days. The 'Lutz Green Leaf' variety is usually grown for its greens and its long storage quality. A cylindrical root that is used for easy, uniform slicing is called 'Cylindra.' 'Burpee's Golden' and 'Burpee's White' are a good choice for yellow and white varieties, respectively.
Harvesting
If you harvest the young and tender leaves for a garden salad, you can enjoy the produce of your beets early. It is better to take only a few leaves from each plant at a time, they need foliage to produce nourishment and maintain growth.
The roots of the beet mature within 55 to 70 days, depending on the variety. When the tops of the root begin to push up above the ground, carefully remove the soil around one of them and check its size. The harvest size should be between 1 1/2 and 2 inches in diameter. The beet roots have a tendency to become fibrous as they grow larger, so don't let beets grow much larger than 2 inches.
Pull the roots out of the ground when harvesting, don't dig them up. Leave an inch of stem on each root while separating the greens from it; this will prevent the root from losing some of its color when it is cooked.
Beets will store well in a cool, dark cellar, if you have one. To maintain crispness, you can bury them in moist sand or peat moss, or put them in plastic bags that you have cut a few small holes for ventilation.

what is the best techniques to grow cylindra beets?
i have been trying to grow cylindra beets, but haven't had any luck. the plant part seems to be growing, but there is no bulb (beet) and it has been 2 months thus far.
If your soil is too heavy, it could be hindering the development of the root. They like a well-drain, friable, soil. If you've got a lot of clay, it may take longer for the beets to form, and they'll be smaller.
