The Nutrients in Beet Juice – Detoxification and Other Health Benefits
Beets are one of the least commonly eaten vegetables, possibly due to many people not knowing the secret health benefits that they hold. Beets are a root vegetable in the same family as chard. The two vegetables even look similar. At the grocery store, there is usually a limited selection for beets and it's clear that the greens of beets and those of chard are almost identical. At the grocery store though, beet greens usually have beet roots attached to them. Although there are many cultivated varieties of beets, the most well known and most available in grocery stores is the red beet variety. Some stores may also carry purple beets. Beets are an incredibly nutritious whole food and both the roots and greens can be eaten raw. Raw beet roots can be added to salads, and beet greens are usually cooked in a similar way as chard.
As healthy as it is to drink raw fruit and vegetable juice, it's most beneficial to consume it as part of a healthy diet. The healthiest diet is one that comprises of whole foods such as fruits, vegetables, and sprouts. Whole foods provide several health benefits and also provide fiber which is essential for elimination of waste from the digestive system. Along with eating whole foods, raw fruit and vegetable juice can drastically improve health and has been proven to heal many conditions. Some cancer survivors attribute their healing mostly to the consumption of raw, fresh pressed vegetable juice. The most recommended juice for healing and health maintenance is green juice. Green juice is that which has been created by pressing green vegetables through a juicer. A wide range of green vegetables can be used. The main reason why green juice is so highly recommended is because not only does it provide so many nutrients for the body, it also contains chlorophyll which is essential for healing and general health. There is caution with drinking green juice though. Aside from wheatgrass juice shots, most health experts recommend to never consume green juice alone. Even Jay Kordich "The Juice Man" recommends that when making juice from fresh green vegetables, be sure to blend in other fruits and/or vegetables such as apples and carrots.
Another highly nutritious drink that's becoming more recognized in the natural health community is beet juice. Beet juice is made by pressing beets in a juicer. Usually an electric juicer is used and both the roots and greens of beets can be juiced. Like green juice, beet juice is nutritionally overpowering and should never be consumed alone. When making beet juice be sure to include other fruits and/or vegetables to the juicer such as apples and carrots. Jay Kordich brought attention to the benefits of beet juice when he presented the world with his juice recipes. He explained that beet juice cleanses the blood and the liver.
Beet roots provide several nutrients for the body including: betaine, folate, beta carotene, iron, vitamin c, copper, potassium, magnesium, phosphorus, and manganese. Beet greens contain many of the same nutrients, but the greens supply more vitamin C and they're also an excellent source of chlorophyll. Beet juice is most well known for its large supply of betaine. Betaine is a red pigment responsible for the bright red color of beet roots. It's also the nutrient most responsible for the liver cleansing action of the roots. Betaine helps to break down fats in the liver. It also helps to prevent the accumulation of fat in the liver. Several studies show that betaine might be helpful in treating nonalcoholic fatty liver disease and also alcohol-induced liver cirrhosis. Betaine is also an antioxidant. Like other antioxidants, betaine helps to fight free radicals. Free radicals have been attributed to high risk of developing chronic illnesses such as heart disease and cancer. Another major health benefit of betaine is that it reduces homocysteine levels in the body. Having high homocysteine levels has been associated with the increased risk of developing heart disease and liver disease.

What does Swiss Chard (Bright Lights) look like when it sprouts?
I have a ton of weeds sprouting with our vegetables. But I don't want to pull up the chard by accident. I really need to know what it looks like so I don't mistake it for a weed. We have never grown Swiss Chard before. We planted it about 4 weeks ago. Links to photos would be helpful. Thanks a lot!
