Why are foods prepared with red cabbage colored red or red-violet, and never any other color?
I need scientific answer, it has something to do with pH
The colored chemical in cabbage is called anthocyanine. It's common in red, purple and blue colored flowers and fruits. In an acidic medium, pH<7 it is red to violet. At about pH=8 it is blue. At very high pH it is yellow.
