Is there a reasonable substitute for aji peppers?
I'm trying some recipes from a Chilean cookbook, and a common ingredient is yellow aji peppers (aji amarillo). I can't find any in my local supermarkets. Is there a substitute I can use that may taste similar? Or any ideas on where to find them in Maine?
YES !!! You can sub. with "De auga red or green,chawa yellow, chilaca (dried from pasilla) or New Mexico red or green". These all have about the same heat index. Hopefully you are near a super or Whole foods Market. Good Luck !!! p.s. you could look on the ethnic food isle for some of these peppers packed in oil or water or vinigar....
